Spring Clean Green Juice

Servings: 2 adults or 1 adult and a gaggle of kids

This is a delicious and sweet green juice that is generally kid {and definitely adult} friendly. It’s full of healthy fat from the avocado, the cilantro is detoxifying, and the greens, lemon, and ginger are energizing. This is a perfect drink with breakfast or as an afternoon pick-me-up.

  • 1 cup orange juice (other citrus fruit juices would work well too)

  • 1 cup coconut water

  • 1 whole peeled banana

  • juice of 1 lemon

  • ½ avocado

  • 1” piece of peeled ginger root

  • handful of cilantro (optional)

  • 2 ribs kale (any kind will work) or 2 cups of baby spinach

  • handful of ice

Place all of your ingredients in a blender and blend at high for 2-3 minutes or until the drink is smooth. Ginger and kale are tough and need some serious blending. If this is your first time drinking something green, you might want to try it with baby spinach instead of kale and add some extra juice or fruit, like pineapple.

  • Low sugar: omit the banana and the orange juice, add water and ½ cup berries or pineapple instead

  • Extra filling: put in 1 whole avocado instead of half

  • Extra green:  add a handful of chopped broccoli and extra kale or spinach

  • Large family: add 1 whole avocado, double the greens, and double the coconut water or add 1 cup plain water

Note: this is technically a green shake and not a juice because you won’t be straining the juice from the pulp. You can strain it with cheesecloth if you like, but including the pulp makes for a more filling drink that is less likely to result in a sugar crash.
